Asian Cherry Chicken Salad

 
Today's recipe comes from my guilty "lunch" I had today.  It consisted of peanut butter, Nutella, Heath pieces and a spoon.....awkward pause....yes, I know.  Now that I made and ate this salad, I don't have to feel bad anymore right?!?

2 boneless skinless chicken breasts cooked and cubed
1/2 cup of dried cherries
1 celery stalk sliced
Handful of chow mein crunchy noodles
3 cups of arugula
1/2 cup of fat-free sour cream
1/2 teaspoon of ground ginger
1 tablespoon of pineapple juice
1 teaspoon low sodium soy sauce


This makes 2 1/2 to 3 servings.


For the dressing; whisk together the sour cream, ginger, pineapple juice and soy sauce until smooth.  On a plate lay down a bed of arugula.  The celery, dried cherries, chicken and chow mein noodles.  Pour on some dressing and you have  yourself a fabulous low-fat dinner, or lunch!  Feel free to add in toasted nuts instead of the crunchy noodles.  You can use almost any dried fruit in this dish or even fresh. Mandarin oranges are another option.  Have fun with it!
