New Spin on Eggs



Whoever said you couldn't eat left overs for breakfast? Have you ever had pizza dough left over? I know I do! When I make a batch I usually have just under a pound of dough left. So I decided to make breakfast with it!

Mini Breakfast Rolls



Pizza Dough ( I had a little less then a pound left over)
4 eggs
Cheese of your choice
1/2 onion, chopped
1 cloved garlic, minced
1 roasted red pepper, chopped
Fresh Parsley
Salt/Pepper to taste
Couple Dashes of Adobo


In a large bowl mix eggs, veggies and seasonings.  Cook and scramble as you would in a pan. Roll out the dough and cut into 2 inch by about 4 inch strips. Add a tablespoon of the egg mixture, top with cheese and roll out into mini breakfast rolls. Brush with olive oil, cut slits and sprinkle with Adobo. Repeat for the rest of the dough. Bake at 350 for about 20 minutes or until light golden brown.  You can really add just about anything to this. Bacon, sausage, potato, any different kinds of dried or fresh spices. Any cheese you want. Be creative and enjoy!
